Asian Summer Slaw

This salad is the only Asian Slaw recipe you will ever need. It is a showstopper of note thanks to its INCREDIBLE Asian sauce, fresh crunch ingredients, and of course it is so healthy. Best part: this sauce can double up as a pad Thai sauce or can be used on stir-fry's.
Let's get right into it.

Ingredients for Slaw:
Slices rainbow colours of cabbage (mixture of red & white)
Handful of sliced snap peas
Thinly sliced red onion
A handful of chopped coriander
Fresh mango or papaya thinly sliced
Sprouts
And whatever else you have in the fridge - broccoli, beans, carrots etc (you choose!)
Dressing (blend in a nutribullet):
4 TBS lime juice
4 TBS rice vinegar
1/4 cup peanut butter (I like the sugar-free version)
2 TBS honey or coconut sugar
2 TBS soy sauce (I use gluten free version or coconut aminos)
4 TBS olive oil
1 tsp salt
2 cloves garlic
1 small knob of peeled ginger
6 leaves fresh mint
1 handful fresh coriander
*Taste & test: add more soy, olive oil or vinegar if needed.
To sprinkle over when served:
Thinly sliced spring onion (I like to slice at an angle)
Roasted & salted peanuts
Fresh coriander
Black sesame seeds
Fresh chilli
Optional: avocado or chicken/salmon
